The real difference between sweating and sautéing is heat. sweating happens at a lower temperature.

However, in practice, sweating in healthier, because you need more oil to sauté and you can use an oil with a lower smoke point to sweat. Cooking in a small amount of broth is basically poaching/steaming which is also perfectly valid and delicious.
